  • 8-10 small potatoes (skin on) (you can use larger potatoes and slice in half or quarters- you can also adjust how many you are cooking based on needs portions needed)
  • Enough broth (I prefer organic bone broth or organic chicken broth) to cover the potatoes halfway
  • Pink Himalayan salt (to taste)
  • Garlic powder (a sprinkle)
  • Olive oil (a generous drizzle)
  • Fresh herbs (like thyme, if you have any handy)
  • Fermented Cabbage as garnish for extra probiotics

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. Place your in a baking dish.
  3. Pour the broth over the potatoes until they’re covered about halfway.
  4. Sprinkle with pink Himalayan salt and garlic powder, and drizzle generously with olive oil.
  5. If you have fresh thyme or another herb, toss it on top for extra flavor.
  6. Roast in the oven for 30-40 minutes, or until the potatoes are tender and the broth has absorbed into the potatoes.
  7. Serve warm with some more fresh herbs, another drizzle of olive oil, broth and a scoop of fermented cabbage.
