Recipe Below: 

Soup

2 bunches asparagus, washed, woody bottoms trimmed off

2 tablespoons Olive Oil (to your liking) 

1 clove garlic, minced 

1/2 White Onion (or full if smaller onion

1 quart chicken or vegetable stock

1 cup coconut milk

Pink Sea Salt to taste 

White pepper, to taste

For Topping (Optional) 

4 slices fresh sourdough bread (Cut into Cubes) 

1 Tablespoon Olive Oil 

1 Teaspoon Garlic Powder

Pink Sea Salt to Taste 

Fresh Dill 

1-2 Tablespoons Greek Yogurt 

Black Volcanic Sea Salt 

 

Pre-Heat Oven to 375

Sauté Garlic, Onion and Asparagus in Pan with Olive Oil & Salt on Medium Heat

When All Soften and add chicken or vegetable stock, turn on low and simmer with lid on for 15-20 minutes, stirring occasionally. 

While soup is simmering, place sourdough bread cubes on sheet pan. Drizzle with olive oil, salt and garlic powder. Make sure croutons are coated well. Bake for 10 minutes or until croutons are brown. 

Once asparagus is soft, but still green in color, turn off heat. Add cup of coconut milk. Use immersion blender to puree soup until smooth and creamy. If you don’t have an immersion blender, use regular blender but be sure the soup is cooled down first.

When ready to plate, add soup to bowl, top with several croutons, fresh dill, pinch of black salt and a drizzle of olive oil. If you want to add some extra cream or tartness (and probiotics) add a dollop of greek yogurt. Serve hot or cold depending on the season! Enjoy!
